| 英文摘要 | There are a large number of statements about the technology of making I-Tang and sugarcane in Chinese ancient books, little mentioning of making sugar out of the stems of Sorghum vulgate. In accordance with the relevant passages about Sorghum in Nongxue Zhuanyao, a practical agricultural pamphlet in Late Qing Dynasty, this paper discusses the cultivation of sorghum for sugar production and indigenous sugar-making technology at the aspects of the land preparation, the seed selection, seeding, fertilization, harvest, crushing, boiling and crystallization. |
