Nanozymes for foodborne microbial contaminants detection: Mechanisms, recent advances, and challenges

英文摘要Foodborne microbial contaminants exist in foods variously and pose a major threat to human health. Therefore, the fast and touchy orientation of microbial contaminants in food is critical for avoiding the emergence and spreading of foodborne maladies. Nanozymes have the advantages of multifunction, which show broad application potential in the analysis of microbial contaminants and the prevention of infectious diseases. In this review, the various materials applied to fabricate nanozymes and diverse types of enzyme-like are briefly introduced. Further, the catalytic mechanism and regulatory behavior are summarized, while the methods in the combination with recognition elements are also been explored. Nanozymes build a multifunctional monitoring platform that effectively improves the detection level and shortens the analysis time and realizes on-site inspection to provide a feasible path for foodborne microbial contaminants detection. However, problems in the creation of superior and biosafe nanozymes, diversification of recognition-to-signal methods, and practical use in complicated food matrices must be overcome.
