Nutrient comparisons among the three varieties Mercenaria mercenaria with different shell colors

英文摘要Mercenaria mercenaria is a commercially important bivalve species with expanding global aquaculture production. Shell color, a key phenotypic trait, influences consumer preference and may correlate with nutritional and metabolic variations in edible tissues. To investigate the differences among different shell color varieties, comparative metabolomic analysis was conducted using integrated UHPLC-MS/MS and GC-MS platforms combined with multivariate statistical modeling. PLS-DA and OPLS-DA revealed distinct metabolic profiles among the groups. Differential metabolites predominantly include lipids, amino acids, and nucleotides. KEGG enrichment analysis highlighted significant alterations in choline, amino acid, and lipid metabolism. Elisa analysis and targeted metabolomics further demonstrated that red variety have enrich melanin and carotenoid in its mantle and shell, and have taken advantage in the flavor over than the white and mottled varieties. While mottled variety demonstrates a significant advantage in terms of polyunsaturated fatty acids (PUFA), including some beneficial fatty acids such as omega-3 and omega-6, and a slight advantage in white variety in the term of essential amino acids (EAA). These findings provide data for the comprehensive assessment of the market value of different shell color strains of M mercenaria, and also lay the foundation for future breeding selection of superior varieties. These findings will offer guidance for selective breeding aimed at enhancing nutritional and market value in M. mercenaria.
