英文摘要mass spectrometry (ms) has gained popularity in metabolomics due to its unparalleled sensitivity and specificity, high resolution and wide dynamic range. ms-based metabolomics techniques have driven the emergence of a new omics sub-discipline - foodomics. in this review, we present the current state of ms-based metabolomics and typical applications in food science related to food composition, food safety, quality, nutrition and health.
